Badusha recipe | Balushahi recipe | Badhusha sweet recipe is a traditional Indian sweet desert recipe prepared with maida, with sugar syrup. It will be same as donuts recipe but the variation is its layered texture and crunchy taste. In south India it is Badusha and in north India it is Balushahi.
The recipe begins with preparing a dough from all purpose flour. Then it is shaped as small flatten balls with dent in center and followed by deep frying in oil. Finally dipped into sugar syrup.

INGREDIENTS
- Maida (Plain Flour) – 2 cups
- Salt – 1/4th cup
- Baking Soda – 1/4th cup
- Dalda – 4 tbsp, melted (or melted butter)
- Water – 1/2 cup
- Sugar – 2 cups
- water – 1 cup
- Patika – 1/2 tbsp, (patika replacement lemon juice)
- Oil – for deep fry
- Crushed Pista – for Garnish
INSTRUCTIONS
Step 1 First take 2 cups of maida and add salt, baking soda and melted dalda to it and crumble and mix it well.

Step 2 After that add 1/2 cup of water and mix well just like chapathi dough. Knead it for 5 min.

Step 3 Cover wet cloth and Rest it for 20 minutes.

Step 4 Meanwhile we can prepare sugar syrup. For this In a kadai add 2 cups of sugar and 1 cup of water and 1/2 inch patika or 1 tbsp of lemon juice and stir well.

Step 5 It should not come to string consistancy. Just turn off in 4 minutes.

Step 6 Now divide the prepared dough into lemon size balls.

Step 7 Make a round ball by using both palms and make a dent in center. Badusha is ready.

Step 8 Drop these prepared badushas in medium heated oil and rest for 2 minutes. do not stir until 2 minutes.

Step 9 After 2 minutes just stir and fry until golden and crisp.

Step 10 Immediately drop these badushas in prepared sugar syrup and soak for 3 minutes. after that transfer to a plate. Do not soak more than 3 minutes otherwise badushas will beaks.

Step 11 Thats it badushas are ready to serve.
