Chicken Pulao Masala:
- Coriander seeds (dhania) – 2tbsp
- Fennel seeds (somf) – 2 tbsp
- Poppy seeds (gasagasalu) – 2 tbsp
- Green cardamon – 8
- Balck pepper – 5
- Cloves – 8
- Cinnamon – 2 inches
- Onions – 1/2 cup
- Green chillies – 6
- Ginger & garlic paste – 2 tbsp
- Crystal sea salt – 2 tbsp
- Red chilli powder – 1 tbsp
- Basmati rice – 3 cups
- water – 6 cups
- Coriander leaves
- Mint leaves
- Bay leaf – 4
- Star anise – 2
- Nutmeg / jajikaya – half
- Cumin / jeera – 1tbsp
Step 1 Roast all dry ingredients mentioned above to prepare Chicken pulao masala.
Step 2 Blend roasted masala ingredients and make a powder
Step 3 Saute Biryani masala spices in 1/4 cup of oil
Step 4 Add onions and ginger garlic paste and fry for 2 min
Step 5 Add Green chilli slits and cashew nuts and saute for 30 sec
Step 6 Add chicken, mint and coriader leaves, salt and red chilli powder and mix well.
Step 7 Add biryani masala, coconut milk and mix well
Step 8 Close the lid and cook for 15 min on medium flame untill chicken cooks well
Step 9 Pour 6 cups of water and let it boil.
Step 10 Add 3 cups of basmati rice washed and soaked for 10 min.
Step 11 Close lid and cook for 20 min on low flame.
Step 12 After 20 min done perfectly.
Step 13 konaseema kodi pulao / chicken pulao is ready with ultimate taste…
