- Maida / plain flour – 2 cups
- Baking soda – 1/2 tbsp
- Salt – 1/4th tbsp
- Melted dalda – 4 tbsp
- Water – 1 cup
- Sugar – 2 cups
- Water – 1 cup
- Patika – 1 inch, or lemon juice – 1 tbsp
Step 1 First take 2 cups of maida / plain flour in a bowl and add 1/2 tbsp of baking soda, 1/4th tbsp of salt and 4 tbsp of melted dalda and crumble it once.
Step 2 Add water and make like a chapathi dough and knead it for about 5 minutes to make it smooth.
Step 3 After 5 minutes it will become very soft and smooth.
Step 4 Rest it for atleast 15 minutes.
Step 5 Mean while you can prepare sugar syrup. for this in a kadai add 2 cups of sugar and 1 cup of water and patika / 1 tbsp of lemon juice and let it boil until sugar melts.
Step 6 Once the sugar melt and forming bubbles just turn off the flame. It should not come to string consistancy.
Step 7 Now come to prepared dough and devide into 2 halfs and make round balls.
Step 8 Roll very thin layer using roller.
Step 9 Add 2 tbsp of oil and sprinkle 2 tbsp of rice flour on this and spread.
Step 10 Roll it from bottom to top.
Step 11 Apply water on top of the edges to stik the layer and roll on this.
Step 12 Make 1/2 inch pieces.
Step 13 Press slightly using finger on each piece.
Step 14 Pour all prepared kajas in medium heated oil. But do not stir immediatly. let it set for 2 minutes on medium flame.
Step 15 After 2 minues kajas floats on oil.
Step 16 After 2 minues kajas floats on oil.
Step 17 Once kajas becomes golden transfer into prepared sugar syrup immediatly without any late. and let it leave for 1 minute and take out. Do not leave more than 1 minute, because these will becomes very soft and it wont be crispy.
Step 18 Thats it juicy and crispy mini kajas are ready to serve.
