This Pongadalu recipe is famous in South India, and must be prepare it on Diwali and offer this pongadalu prasadam to Goddess Lakshmi Devi. It is a very very old traditional recipe. Our an-sisters used to prepare this special recipe on Diwali Au-specious Day and offer it to lakshmi devi.

The main ingredients in making this Pongadalu Recipe is Rice Flour, Jaggery.

Pongadalu Sweet Recipe Card

- Rice – 2 cups
- Jaggery – 1/2 cup
- Sugar – 1/2 cup
- Water – 1/4 cup
- Ghee – 1/4 cup
- Sesame Seeds – 1/2 cup
- Oil – for deep fry
Step 1 First take 2 cups of rice and wash twice.
Step 2 Soak the rice for 5 hours by adding water.
Step 3 After 5 hours drain off water completely.
Step 4 Pat dry the rice for 5 minutes and rub extra moisture with cloth.
Step 5 Now blend the rice and make a fine powder.
Step 6 Seive the rice powder to make it very smooth powder.
Step 7 Press the flour tightly so that flour will not dry. Keep this aside.
Step 8 Now take a kadai and add 1/2 cup of jaggery, 1/2 cup of sugar, 1/2 cup of water and let the jaggery and sugar melt.
Step 9 After the jaggery melts, add 1 tbsp of cardamom powder and 1/4th cup of fresh coconut grated. and let it boil for 4 minutes on medium flame.
Step 10 For consistancy checkup, add a tbsp of sugar syrup in water, then the syrup will form like a ball, this is the right consistancy.
Step 11 Now add the prepared rice flour gradually and mix well with our any lumps.
Step 12 Dough should not too tight, it should little loose than chapathi dough.
Step 13 Now transfer this into a bowl.
Step 14 Add 1 cup of hot water and mix well without any lumps.
Step 15 Batter should be like same as dosa batter.
Step 16 Now pour a Spoodle Spoon full of batter into a hot oil and turn the flame into medium. And dont turn to other side immediatly. Let weight until it floats on oil itself.
Step 17 Fry upto light golden color both sides and take into a plate.
Step 18 Thats it pongadalu is ready to serve 🙂
