Shakannam or Saakannam rice is a traditional meal in india. Especially it is used in temples to offer as prasadam to hindu gods. Specially for godess durga devi for dasara festival and lord venkateswara swamy. It is very famous in tamilnadu temples.
This shakhannam is made for naivedyam special recipe that is why we didnt add ginger galic paste to this. This recipe is offer to specially for saraswati devi avatara in dasara festival. She like white color. So we off the recipe in white color using all vegetables. You can add any vegetables to this. We use many vegetable to this recipe the is why we called this as shakhannam.
This shakhannam / vegetable pulao is made with rice and vegetables, some spices and herbs to give more flavor and taste.Serve this recipe with raita, pickle and roasted papad

Shakhannam / Vegetable pulao Recipe Card

- Cow ghee – 4tbsp
- bay leaf – 2
- Shahi jeera – 1 tbsp
- cinnamon – 2inch
- cardamom – 3 pods
- cloves – 6
- pepper – 5
- Green chillies – 2
- onions – 1 small size, sliced
- potato – 1/2 cup
- carrot – 1/2 cup
- beans – 1/2 cup
- capsicum – 1/2 cup
- cauliflower – 1/2 cup
- sweet corn – 1/2 cup
- green peas – 1/2 cup
- salt – 2 tbsp
- basmati rice – 2 cups
- coriander leaves – 1 bunch
Step 1 In a kadai add 4 tbsp of cow ghee, bay leaf, shahi jeeraa, cinnamon, cardamom, cloves and pepper.
Step 2 Saute all these spices for 30 seconds
Step 3 Now add Cashew nuts, green chillies and onions and saute for another 30 seconds.
Step 4 Once onion fried add all vegetables, salt into it
Step 5 Cook all vegetables for 5 minutes in medium flame
Step 6 After 5 min all vegetables cooked 70%, now add basmati rice 2 cups rinsed and mix once
Step 7 Add 4 cups of water and salt to this and mix well
Step 8 Close lid and cook for 10 minutes on medium flame.
Step 9 after 10 min rice cooked 70%, now mix rice gently
Step 10 Close lid and cook for another 10 min on simmer.
Step 11 After 10 min rice cooked 100% now add coriander leaves and mix gently
Step 12 shakshannam / vegetable pulao is ready to serve
Step 13 We cook this specially in dasara navratri as naivedyam for godess durga matha. We prepare this as naivedyam so we didnot add ginger garlic paste to this.
